Pizzeria da Simone in the Monteverde section of Rome made the best pizza I’ve ever had in my life, no questions asked.
You walked in, showed them how big you wanted your slice to be with your hands, and paid for what it weighed.
They then folded your slice in half so the cheese and sauce (or whatever toppings you got) were smashed together, wrapped it in paper, and then you ate it like a sandwich.  Oh, how I long for that pizza…
You can find it on Via Giacinto Carini between Via Fratelli Bonnet and Via Giovanni Livraghi near the American University of Rome.  Go, and eat a piece for me.
